Mission

Two Amsterdam neighbors bringing healthy and sustainable food to the masses with their pop-up café at Tolhuis this summer. Ingrid Serruijs and Irene de Ruijter are on a mission to change the culinary world, one bite at a time. At SixtyForty, they embrace the trend towards plant-based proteins, while still accommodating traditional animal protein sources.

They believe that everyone can make a difference in creating a more liveable planet by choosing healthier and more sustainable alternatives. Discover why we chose the name SixtyForty.

The protein transition, which signifies the shift towards vegetable-based protein, is struggling to meet its climate and nitrogen targets.

Our aim is to assist in achieving this goal by focusing on a ratio of 60% plant-based protein and 40% animal protein for our meals. SixtyForty!
